Dreaming of having this right now for breakfast 🙏. Somedays my body craves nothing but Mexican Food. I remember this tasting crispy, ever so savory, and delicious. I wiped out my plate and went for seconds 🤤 so this was my attempt at vegan flautas, vegan refried beans, and yellow rice. 🔥🔥🔥

🥗 G R A I N  T R A D E R S 🥙 I’ve been showing all my “best of” lately, so here’s my “best salad”! Grain Traders serves diy salads and you can make it vegan/ vegetarian and there’s also meat options as well.

My salad: quinoa base, lentil patty, sweet potato, pickled cauliflower, crunchy chickpeas and wasabi mayo (spicy!). GT Is definitely more expensive than your average salad bar like Soup Spoon/ Cedele/Salad Stop etc but you can taste the quality. Their broccoli soup is very good as well (tho it was served room temperature and not hot) and their banana cake (very small slice) tasted healthy and not too sweet. Overall 10/10 thought I wish it were less expensive. Seating is also super crowded during lunch hours as it’s in the CBD area so keep that in mind!

A pretty pink smoothie this morning. I wasn't sure what kind of smoothie I was going to make. I just kind of looked in the fridge and went with it LOL. I still had some of that higher-calorie then desired oat milk that I bought to use. So I used part of that and some tart cherry juice for my liquid. But substitute anything you want for liquid it should work fine.
Creamy Cherry Berry Smoothie
1/3 cup Trader Joe's tart cherry juice
2/3 cup unsweetened oat milk
1/2 cup unsweetened soy yogurt
1 Tblsp organic flax seeds
1 scoop MegaFood Daily turmeric powder
1 fresh organic banana
1/2 cup frozen cherries
1 cup frozen organic strawberries
Blend in Vitamix

Lil’ chickpea flour frittatas😻 perfect to make ahead for quick breakfasts! All it takes is sautéing some onion, garlic & veggies of your choice (here I have broccoli, corn & mushrooms😋), dividing them between cups & filling the rest with the chickpea batter which is simply chickpea flour, water, nooch, baking powder, sea salt & pepper! I added some garlic powder, cumin & herbs for more flavor🌿🧂so good!! Thanks @themostlyvegan :-) •

La tercera edición del evento de @gastronomia.vegana tuvo entre sus platos a esta versión de lomo saltado plant-based.

Probar este plato, en especial, me llenaba de emoción porque, cuando comía carne, mi plato favorito era el lomo saltado y cuando me hice vegana, empecé una travesía por encontrar una versión de saltado que me satisfaga.

Esta, en particular, la disfruté muchísimo porque no solo son champiñones salteados si no que tiene una carne vegetal medio dulzona que le aporta un sabor especial y diferente a todos los salteados que he probado. Me gusto muchísimo el sabor del wok que tenía impregnado y en combinación con el arroz y las papas nativas, fue todo un éxito que, de hecho, entra en mi top 3 de los mejores saltados.

La tercera edición del evento de @gastronomia.vegana tuvo entre sus platos a esta versión de lomo saltado plant-based.

Probar este plato, en especial, me llenaba de emoción porque, cuando comía carne, mi plato favorito era el lomo saltado y cuando me hice vegana, empecé una travesía por encontrar una versión de saltado que me satisfaga.

Você já sentiu algum desconforto intestinal depois de ter comido feijão, lentilha, grã de bico, soja ou até mesmo ervilha? Provavelmente a leguminosa que você comeu não foi deixada de molho.

Só vejo vantagens quando se trata de deixar as leguminosas de molho!
🌱 elas ficam mais macias e seu tempo de cozimento diminui;
🌱 a quantidade de fibras não digeríveis também diminui, elas são as causadoras dos gases e desconforto que citei lá em cima;
🌱 também há a diminuição dos fatores antinutricionais, ou antinutrientes. Os antinutrientes (fitatos, oxaltos, taninos...) atrapalham a absorção de nutrientes, como cálcio e ferro.

No caso das leguminosas, os fitatos são os antinutrientes presentes e podem atrapalhar a absorção do ferro desses alimentos. Então o ideal é deixar de molho por no mínimo 8 hora (de um dia pro outro), isso vai fazer com que os fitatos saiam na água formando uma espuma como na foto 2.

Lembre-se de trocar a água quando deixar mais de 8 horas, principalmente se estiver calor, para não correr o risco de azedar os grãos. Antes de cozinhar, deve sempre descartar a água, lavar bem os grãos e preparar a comida com uma água nova!

Os dejamos un platito de cuchara, que hay que aprovechar antes de que llegue el calor de verdad, si es que llega este año 🤷 
Nuestra comida de hoy han sido estás riquísimas judías blancas a la marinera 🤤 un plato muy sencillo que de prepara rapido y que queda muy rico! Nosotras usamos el tofu con wakame de @veganlidlspain, pero serviría cualquier otro y uno que no lleve wakame también. Animáos a probarlo! 
Ingredientes:
200 gr de tofu con wakame 
2 hojas de alga nori
400 gr de judías blancas cocida
1 cebolla mediana
2 dientes de ajo
1 cdta de pimentón
1/2 taza de vino blanco
1 cda de zumo de limón
2 hojas de laurel
1 litro de agua

Doramos la cebolla y el ajo en una olla con un chorrito de aceite. Cuando la cebolla esté bien pochadita añadimos el tofu desmigado, el pimentón y cocinamos durante un par de minutos. Después incorporamos el vino y el zumo de limón y dejamos que se cocine hasta que se evapore el alcohol. Entonces incorporamos a la olla las algas nori hechas trozos con las manos, el agua y el laurel. Esperamos a que rompa a heevir y en ese momento bajamos el fuego y dejamos que hierva durante 15 minutos. Por último incorporamos las alubias blancas, si os gusta que la salsa este más espesita y vuestras alubias solo llevan agua y sal, podeis incorporarlas sin escurrir. Doramos la cebolla y el ajo en una olla con un chorrito de aceite. Cuando la cebolla esté bien pochadita añadimos el tofu desmigado, el pimentón y cocinamos durante un par de minutos. Después incorporamos el vino y el zumo de limón y dejamos que se cocine hasta que se evapore el alcohol. Entonces incorporamos a la olla las algas nori hechas trozos con las manos, el agua y el laurel. Esperamos a que rompa a heevir y en ese momento bajamos el fuego y dejamos que hierva durante 15 minutos. Por último incorporamos las alubias blancas, si os gusta que la salsa este más espesita y vuestras alubias solo llevan agua y sal, podeis incorporarlas sin escurrir.
